    Make sure breaks are working, pads are not worn out. (edit: also discs, they have a minimum thickness, usually printed on the disc)
    Drivetrain should be shifting properly.
    Suspension should be setup to your weight (lookup manufactures website for pressure starting point)
    Check if spokes are tight and wheels are running true.
    Check for any weird noise.
    Personally, i don’t remove the old sealant and just add new until i have to change tires (which is like once every season anyways for me) but if you don’t know how much is already in there, it might be a good idea to remove it since it will build up over time and actually add significant weight.
    Also check tire pressure and for any cracks in the rims/frame
