I might swap the handlebar and if possible put a better brake for the back wheel as rn it just has the pedal backwards brake. It has a 7 gear sram super 7 shifter that works fine. Its full aluminium and a made in germany bike so it is a very durable bike. As for bike packing gear i got a sleeping bag and will get a hammock. Also i will use panniers as i dont think bikepacking with a backpack is smartest.

I wouldn’t advise going off tarmac or very light gravel. That coaster brake is not going to take a beating on any descents when loaded with all of your gear in panniers. If sticking to forest paths and fire roads I think you could be fine for a short trip!
Issues that come to mind are lack of hand positions (and associated fatigue/soreness) and low-clearance fenders that could get jammed with mud.
It’s not ideal but if you take your time you’ll do fine. I’ve ridden all kinds of bikes all around the world and one of my favorite trips was a two week ride around the Netherlands and Belgium on a bike like that. My wife and I had all our stuff in panniers and bags strapped to the handlebars.
As long as there is 0m elevation gain…
