Bringing the bars back to 440 at the very widest would be the first order of business. The drivetrain seems pretty impractical if you ever like going fast but but it’s got a certain charm, assuming it works.

Nice bike. I’d install some narrower pursuit bars and 8 or 11 speed internal gear hub, given that you already have nice single speed chainring setup and sturdy chain. Sealed and all-weather setup for all year round use. Probably 35c touring tires for better gravel experience but it’s up to you.
Or go the other way and install some Sora or Tiagra/105 etc, assuming you’re comfortable with combo shifters.
A lightweight rear rack with removable panniers would help if you are into commuting. I used panniers with backpack slings and quick release so that you can buy stuff and pack it directly in the store.
