Hi there! I recently did a bike fit and now in the market for a new bike. My number 1 choice for a bike is Canyon Ultimate, seems like L and XL are the closest sizes to me. I found a great option in size L, but afraid to pull the trigger without being sure it will fit me perfectly. Can someone take a look?

You can only adjust the handlebar height by 15mm with spacers on the ultimate. So if that is not enough for you, you have to go with the XL and buy a shorter stem/cockpit.
I suggest using a tool like https://www.bike-stats.de/en/ and compare both.
