I am planning on either doing a 100 or 200 mile race in 13 weeks. In order to get a little more structured I tried using chatgpt to create a 12 week training plan using the 80:20 recommendation. I may be adjusting things like interval time/ride time etc depending on how week 1 goes. Does the structure of this plan look accurate/efficient? Or would you change some things up for a long endurance race?

But your training plan just looks like something ChatGPT would spit out. 4 weeks per block and no rest week is just dumb. The standard approach is 3 weeks on, 1 rest week per block.
No, honestly this plan is very bad. Its clear that chat gpt wrote it. I mean the math isn’t even correct and it’s not internally consistent. And it does not follow the 80/20 rule of intensity.
Our bodies are great at adapting. But be mindful that our ligaments can take up to two years to adapt to a strenuous activity. That’s why so many older people got hurt playing pickleball.
You start working out lifting weights and after a few months can lift more due to your muscles adapting, but your ligaments will be far behind. And then you go and do too much and a ligament tears
