This is my first time using bars with this kind of sweep so I’m not sure how it is supposed to feel or where my hands should go. I wonder what you would do with these bars and the kind of geometry I have here. I wouldn’t say I’m too bunched up and crowded in the cockpit but I do have to be mindful of my knees on tight turns.

It’s entirely up to you and what feels comfortable for where and how you ride. The more backsweep the bar has, the more upright you’ll sit. The width of the bar is also important, as a wide bar will make you spread your knees on tight, slow-speed turns.
On my 52cm All City Super Professional (nice bike, btw), I have 100mm stem and a 750mm wide Soma Dream riser, with 50mm of rise and 25º backsweep. Perfect for urban cruising with a little dirt thrown in.
