Pictured is my current set up—rockgeist barjam with a dry bag from Revelate. Here, I only have my sleeping bag, and as you can see I have filled the bag as wide as it can go before it interferes with my braking/shifting. I don’t have a hugely bulky bag—EE 20 degree quilt.
Would I be better off distributing items differently? It seems that I should be able to fit more than just my sleeping bag up front. Most folks online seem to be able to fit several things in their roll

I get more out of bags that compress better that the dry bag. I put my tent and sleeping bag in separate light nylon bags then shove both into a large waterproof compressor bag.
I have that plus the little front pouch you can mount it on the sweetroll bag-carries all my stuff i might need during the day including my lunch
Extend the bar with a BarYak, or similar.

I have never owned any EE quilts, but the specs do state 7L compressed for the 20 degree quilt, so that bag looks not far off that. Honestly I’d question if you need that much quilt… Obviously this depends on your location and weather, so thats up to you to decide. But in general, most people carry a bit less substantial of a bag, as they will also be carrying layers(puffy jacket, tights, etc) that they will want for riding in cooler temps and those can be used to boost the comfort of the bag/quilt.
*Full disclosure, I’m probably not really qualified to reply to this as I often don’t carry a sleep kit at all, and my entire packed volume is frequently sub 10L for my bikepacking trips/events…
I kinda prefer to keep my quilt in a seat pack instead since it’s bulky but not heavy. Then I pack the bar bag with heavier items and sometimes even strap a tent or chair onto it.
