Looks great! I really like those Via Carisimas, and Univegas typically have really nice paint. I would think about some fenders, I really like the SKS Bluemels series. Some rechargeable lights are never a bad idea either.

if you’re touring, look into some different kinds of racks. Looks like you’ve got fork braze ons so your front rack options are going to be pretty good.

All I can say is my first bike was a Univega. Yours looks identical to how I set it up before I gifted it to my big brother. A suggestion is more bottle mounts. Racks in the front and rear to carry stuffs and feed bags and handlebar bags go a long way.
