Can I make my 3x to be a 1x by removing the front derailer ? Can I just set the chain on the middle chain ring? Will it fall off? My front derailer was unadjustable. On the smallest chainring, the derailer cage would rub on the rear tire. It would rub the chain on the largest ring. I just want to remove it.

You can, but your mileage may vary based on several factors here
Your front derailleur was not aligned or set up properly. Your chain will probably stay on whatever ring you put it on, but without the derailleur your chances of dropping the chain towards or away from the frame are way higher.
