  1. I run Salsa Cowbells in the exact same setup you do, with tektro RL721 brakes on the flats. They are lightly swept with relatively shallow drops.

    Salsa Cow chippers have more sweep, and salsa woodchippers have absurd sweep.

    I highly recommend this setup for city riding, half centuries, and hauling. I’ve done some light gravel with it but not regularly. The Cowbells are at the perfect angle for my wrist comfort, and having brakes on the flats makes multiple hand positions a safe and reasonable in all conditions rather than only in flat, unobstructed areas.
