I think the main difference is canyon has a lighter CF frame while the Trek has better components like the 105 group set. Price points are also the same.
Most of my riding is road and gravel/dirt but packed. Ride about 5-8 miles per ride right now. Decent amount of hills in my area (Orange county, CA) and hills will inevitably be a part of my route.
One other advantage to the trek is I can get it immediately as it’s in stock vs waiting for the canyon until mid March
