Hi everyone, pretty new to all of this but I’m not able to switch gears into the two biggest rings. When I attempt to, the change skips around a bit and drops back down.
Could this just be adjusting one of the limiter screws?

Are you able to manually push the derailleur onto the lowest gears?
Hiya, welcome to the wonderful world of bike maintenance! You’re gonna love it here.
If you are unable to shift into larger rings in back there are (usually) only two causes. Either (A, unlikely if you were able to shift thru the whole range before) your limit screws are in fact set incorrectly, preventing your derailleur from moving across the whole range of the cassette; OR (B, which I think is more likely) you have somehow introduced some slack into your shifter cable. This can occur if the rear D shifter isn’t set to the highest gear (aligned with the smallest cog) when you remove and replace the rear wheel. Basically instead of the shifter starting from the highest gear it started from somewhere in the middle of the range.
So I recommend taking the wheel out, shifting the rear D all the way down and letting all of the tension out of the cable, & reinstall the wheel. That should fix it.
