This here is my 2018 Fuji sportif that I have outfitted for touring duties. I added SKS blumels fenders as well as a rear rack with panniers. I also put on a chainstay mounted kick stand. I’m looking for a decent handlebar bag and maybe a bag for the triangle. Any recommendations or anything you would change?

Be careful with overloading that rear wheel, especially if you’re a heavier rider. I didn’t count them but it doesn’t look like you have a ton of spokes.
i think those panniers are too big for this kinda bike. dont overload it. you can tour on endurance road bikes but you have to be a bit more considered. embrace an ultralight backpacking attitude, that doesn’t mean spending loads of money on ultralight gear.
I’d be hugely wary of putting two 30L panniers on a bike with 28 spoke wheels. Not to mention that they’re likely going to cause a lot of problems with handling since the bike doesn’t have a particularly long wheel base. All of that weight behind the rear axel is going to make the front of the bike extremely light as it acts like a pendulum.
Shame because the panniers matching the bike colour looks great
The 2x drivetrain looks stock – you may consider a smaller small chainring for more comfortable climbing while loaded (if your front derailleur can accomodate). The best way to know is load-up and go ride some hillage – you will know quickly if what you have is good or not.
What rack is that? Is it supported by the axle?
