
Specifically, a steel fork with a flat/ flattish crown, made of three pieces + steerer. I’m unsure whether the style (the holes, circled pieces) also has a specific name.
Basically, what would I type into a search engine to find a number of comparable, similar forks?

Lugged dual crown fork, or lugged twin-plate fork.
Not dual crown in the sense that is used with DH forks, so it can be a bit confusing.
As for a fork that fits your requirement, the Soma CX Fork might be good. 400 axle to crown, 1 1/8″ steerer, takes disc brakes. Doesn’t have the dual crown (the bit that gives those “holes” on the crown, but it is lugged.

Be very careful about Rake/Offset of the fork you buy. That’s the second pillar of how a fork affects bike handling, and you absolutely should not ignore it. Your frame will have been built around a fork with a specific length (a-c) and a specific offset/rake, which results in a Trail value. Trail tells you how the bike handles at low and high speed. Change it more than a couple mm and you will feel the difference. Change it a lot and the bike will handle completely differently. For instance, those Crust forks are pretty as hell, but they are also really high offset, resulting in a low trail.
If you still want pretty good tire clearance – the Stridsland or the Bassi Hog’s Back fork (available via C&L Cycle) are the best bets. Lot of options with less tire clearance.
