I just wanted to check it’s ok to mount this r8000 rear mech like this. If I mounted it in between the notches I couldn’t get my wheel in or out.

Looks good! It’s not supposed to go between the notches.
That is the correct orientation. The bolt head is thrashed though. Get a torque wrench for future use.
