Mainly focus on getting the chain line right. Probably 130mm rear spaced wheel. Lots of fixed hubs for that. Surly, Paul, Phil, etc then you need to get a crank that’ll work well.
I would suggest a square taper fixed crank where you can play with the square taper bb if need to get your chainline correct.

buy parts missing and install them, you are missing few parts, and stay safe if you are going brakeless
