I currently have a Bianchi San Remo which is a touring bike. I love it so much but unfortunately I’m coming to terms with it being too big for me. I need something more comfortable. And I’m wondering if this Fuji would be good for the road and bike camping?

Absolutely! Hybrids make great bikepacking and gravel rigs because they have balanced geo, tons of gear range, lots of tire clearance and because they use mtb levers they can accommodate many different alt bars. This bike with a set of jones h bars, some new brake pads and a front rack would be an excellent touring bike with tons of utility.
