
I have another pannier for the back, and have a stove in the frame bag, one of the esbit ones that burns solid fuel. I figure once I plan a trip I’ll have a better idea what I need to pack as far as food and clothes and comfort.

Get some water proof bags for the tent and sleeping bag. You should be able to get a bit more compression and you never know if it might rain.
unrelated: I have never seen so much spokes on a bicycle wheel! (yellow one in the back).
It depends very much of the length, duration and localization of your trip!
You can consider packing some tools and spare parts (tube, repair kit, pump being the minimal). A decent length of paracord, a decent length of duct tape and several zip ties can be very useful too.
A powerbank can be handy, if you rely a lot on your phone.
