So, the rear cassette and the front sprocket are way too untidy even on the lowest gear, so it doesn’t matter how much I adjust the rear derailleur; the chain will always come out of the front sprocket. How do I adjust it? Sorry for the newbie question.

If your chain falls of the front chainring, then it sounds like it’s an issue with the chainline.
Is this an eBike? Or DIY eBike?
From the photo you’ve posted it looks like your chainline is already off by quite a bit, and your front chainring is outboard a bit too much. Do you have a narrow-wide chainring?
Also, is it possible to mount the speed sensor on the left side of the bike? One less issue if the chain falls off inboard.
