First take everything off and then put everything on.
Bottom bracket before the crank and headset before the fork.
Order doesn’t really matter.
Lots of options. I usually do headset, BB/cranks, fork/bars, assemble wheels (disc’s, cassette etc) and install. Dealer’s choice from there in terms of assembling brakes or drivetrain.
