I have bought an old mountain bike. Nishiki Bombardier, 54 cm frame and 26″ whells and would really like to learn more about bicycles and trying to convert it to a touring bike. I already have a Kona Rove DL 2022 that I have been doing some touring on. I would like to tear the Nishiki apart and build from scratch. Is it worth the work and learning something at the same time. I also like the easy maintaining of the rim brakes. I know they are not the best in rain. I would like to change the fork and the steem and the handle bar.

All of those things are possible. Already looks like a touring bike to me, though.
It already is a touring bike. In fact Im willing to bet that someone has toured on this exact bike.
Congrats it’s already a touring bike! Why would you want to change the bar, stem and fork?
Thanks for the inputs. I know understand that the bike is already ready for touring. Thanks for the comments.
To start touring with low budget, it’s probably the best you can get : triple crankset and no shitty suspension.
I did start on this type of bike, slowly upgrading parts to part. At first the brake for V-brake instead of cantilever, then the handlebar and at the end the drive train. I now reach the limits of upgrability of this type of bike : still fairly heavy and no disc brake possible.
However, it’s a great mechanic school, and parts are pretty cheap and easy to find and replace. And with a minimal maintenance, it’s basically indestructible
Ride it like it is and see how it fits. You can swap out various parts to make it more comfortable for your riding style. Seat, stem, handlebars are all fairly easy to change.
