I have 2 odyssey tires (path pro and broc) both of them have “directional treading” as stated on the odyssey website but for the life of me I can’t figure out if I have been riding them wrong or not. Is the direction of the tread given by the 3 symbols on the tire wall?

The symbols aren’t tread direction, there’s usually an arrow somewhere on the sidewall. Check both sides.
Otherwise, (when the bike is right side up) the middle of the tread points forward on the top of the tire. Your back is def on backwards.
Front is hard to tell from camera angle, can’t tell if the horizontal lines are curved or not. The middle of the curve should point forward if so. If not, use the trapezoidal lines – point forward / towards the middle (on top, when the bike’s upright)
