I have a 1984 Univega Gran Turismo. I have been wanting to run 700c wheels on it since the day I bught the frame. But there isnt much information out there except for the Advent Tri-Align and Paul Monolite. Both of those sets will run you over 400 usd. I Purchased a brand new set of 27" wheels from Universal cycles. They are not light. They are however sturdy (36h) and have sealed hubs. I have built up my bike with some old and new parts including a set of DIa-Compe CR-X cantilever brakes. I just wasnt sastisfied with the lack of tire choice for 27" wheels. The frame can hold a much larger tire, but none are available.
I decided to bring in a 700c front wheel from another bike and I was able to adjust the Dia-Compe CR-X brakes low enough to easily work on the smaller wheels!!!! Why didnt I try this before? I can fit a 38c tire easily! Now I am trying to decide on what gearing I want. I will post pictures when I have it built. Hope this post help some of you guys out. Have fun and ride often.
