I got a pair of Dia-Compe DL800 laying in a bin and I thought about using them to 700c-650b conversion.
However I can’t imagine how to take off wheels when they are mounted with brake pads. Say I want to run 1.75"-1.95" tires and it just seems impossible. There is not a quick release lever, not a… thing to do it as I see. Even with a tire fully deflated I doubt it would slide through pads.
Do you have to unscrew brake pads to take off a wheel? Is there any other way to do it?

There is the adjuster on the caliper itself.
You could unscrew that. The other trick would be deflating the tyre.
I can think of three ways:
Use levers with a cable tension release feature. Campagnolo ones had this for years, some models of Shimano too.
Deflate the tire.
Use a tire that’s not much wider than the rim.
track down a pair of matching Dia Compe brake levers. Many online sellers… you may even find them in another used bike shop..
They have the brake release on the top op the levers.

Usually there is a slotted housing stop somewhere that you can use to release the cable tension.Â
Or deflate the tire of course.Â
