Was originally a 6 speed freewheel but the wheels were wrecked, had these wheels laying around so now it's an easy 7 speed cassette, 30mm tyres cause I'm old and it looks cool

It’s a beauty! Love the look of old steelies. I personally evolved my old school roadies a few generations newer on the components. 9/10 speed integrated levers really changed the game on how much I enjoyed riding them. But that’s just me, and maybe something to file away if you really fall in love with the way it fits/rides. You can always keep upgrading!
