I just bought my first fattie, a Salsa Mukluk. Looks like 2013. I probably would have been better off with something newer but I love riding this thing and so I'm just going to upgrade as needed. Note, I'm not much of a bike mechanic so I'll be taking it to the shop for most stuff. I'm also just a middle aged recreational rider.
Probably the most obvious would be hydraulic brakes. Any suggestions on a reasonably priced appropriate option would be welcome.
I'm having some trouble hitting the lower gears regardless of which ring the front is on, which may be an adjustment issue or a reason to replace the derailleur. I also don't really find myself using the highest gears much. I would love to have an internal hub but that's probably more money than I'm ever going to be able to spend.
The frame will accept at least 4.5 but I've never ridden anything as fat as the 3.8s on there now and then I would need to make changes to the cassette. But maybe?
Any thoughts would be helpful.

The low-hanging fruit seems to be pedals and saddle.
Most important seems to be figuring out the front gearing. Could be fixed with a simple tune-up or new cables. Might need a derailleur, but the bike shop will tell you.
Does your bottle fall out of that cage?
Is anything notably uncomfortable? Or are you just trying to ‘modernize?’
Are your wheels tubeless? I prefer tubeless on the low-pressure tires, and it will cut back on flats quite a bit. Especially if you’re riding over goat heads.
