New bike day donated by my grandfather! How should I build this bike? It’s my first go around and I already have a gravel bike so I was thinking keeping this a road bike or make it a chill commuter. Suggestions and parts links appreciated!!

I’d replace the saddle, for road bikes that type hurts my bum but you might not have that experience so take it with a grain of salt. I’d probably take it to a bike shop (or you do it yourself) and do new cables and housings. But besides that just ride and enjoy it!
Beautiful bike! What model is it? It looks similar to the old Schwinn La Tour I used to have.
Ride it for a while and listen to what it tells you
I’d just keep it as a chill commuter/errand bike. Mount a rear rack, maybe a front basket, perhaps get some more upright flat bars and thumb shifters.
New tires, tubes, brake pads, cables, maybe housing, bar tape. Stop there.
