
I’m planning a bikepacking trip between Bergen and Trondheim (direction still flexible if one way is clearly better).
I’m aiming to build a route that prioritizes gravel and remote roads over pavement, includes plenty of climbs (I’m totally fine with around 2,000 m of elevation gain per 100 km or even more), allows for wild camping, and focuses on experiencing nature rather than riding through cities.
What are the must-ride routes/places I shouldn’t miss along the way?

That’s probably going to be hard to find. Most of the longer stretches of gravel is no on the western side of Norway. You will find some roads over mountains, fjord to fjord. You are more likely finding gravel going Trondheim – Oslo, especially around the “triangle” Oppdal, Røros, Lillehammer.
