EF does the same, their cannondales have LAB71 paint but are actually himod frames under it.
They do it because the weight difference between those two are very small and they would rather have a stiffer and more durable frame for races, as the LAB71 frames flex a lot more during race loads.
I could see canyon do the same, for the same reasons.
I don’t know the official reason though, this is just my best guess.
