It will get on, wedge the plastic tyre holders into one side, and then another one a few cm away and then gradually pull in, before you know it, it just snaps into place

Make sure it’s in the middle of the rim everywhere while putting it on. Will give you a few mm more headroom. Some people use water with a drop of soap on the last part to make it more slippery.
The red tool on your floor can also help, or two of them. But be careful.
I’ve also been there. I know it’s a pain. It will work eventually

Use the plastic wedges in small increments and make sure the close bead is as far to the far side of the rim as possible all around. Reduce friction with soapy water
But srsly I put gp5000 on with just my thumbs

There’s a technique which you may or may not have tried. With your hands you fold the tire over the rim at the edges where it hasn’t mounted yet. Basically bending it over into an L shape over and over again on either side of the “not cooperating” part. You gotta keep working it. Try different spots. Often it’s the back and forth of doing it that works it into place. You can also cheat it a bit by squeezing the tire so that the tire bead is on the center of the rim and not the flange. It gives you some extra millimeters to work with. I don’t use tire levers to install a tire because they can damage the tire and the tube.

Spray some soapy water onto the bead. Also the part of the bead that is already on the rim should be pushed to the center to give a little more slack.
It never gets easier, we just make the same complaints about harder equipment.
On the past 3 wheels I have felt that I must have the hardest combination ever, but each new rim and tire has been substantially harder than the previous. Going back to what I considered almost impossible before with my improved skills I can get them on without issue.

Start over and rub some baby powder on the whole tire to let it slide around on the rim more.

You need to create some slack.
The rim is a U shape, it has a well in the middle that is a smaller circumference than the edge.
Starting on one side of where you are stuck, push the tyre bead into the centre channel and hold it, push the next part of the tyre with your free hand into that channel and hold it. Use your first hand to do the next bit. Repeat until you are all the way around.
This should create enough slack to seat more of the bead.
Repeat until complete.
If it’s a huge pain in the ass to mount in the comfort of your own home, I suggest finding different tires. Roadside flat repair could be nearly impossible if the tire and rim are a poor match.

by working the rest of the tyre into the centre of the rim( in the groove in the middle) makes the tighter section slightly looser but the easiest ive found is a tyre monkey lever, fantastic bit of kit 👌🏿
