Also, I would appreciate some videos about banking in France as an American. How easy is it to open different types of accounts? Get a mortgage? Last time I was in France there was some difficulty about even getting a local sim card so that I didn't need to use those tourist data plans.

Burgundy is really amazing, the Duchy of Burgundy was famouse in Europe, this very old land is full of history, culture, art and heritage.
For a long time, I thought that the best criteria for settling in a city was the presence of universities.
Yet I live near Strasbourg, and none of my daughters study in Strasbourg. That's the hasars of life…and of Parcoursup.
So, for me, the most important criteria for settling anyewhere is the presence of a varied medical service.
Burgundy is a beautiful region, but it's a medical desert… except in Dijon.
So, yes, Dijon is a good choice!

I hadn't really thought about Dijon. I think we will look at a week or two this summer after some time at Sancerre. Just need to see if there is a train line we can use to get there.

I was in Dijon years ago and loved it. Was with a friend who had lived in Europe for years, who was amazed that she had never been there before. I consider it one of Frances best kept secret. A beautiful historic area and very walkable. I want to visit it again.

I had a week in your breathtaking city last year, and fell in love. Didn't need public transport at all, so easily walkable, found the central accommodation great value for money, the people friendly and found it to be a tender, kind place.
Climate is #1, rural feel with green space and walkability is second. Close or acess to travel and doctors/ hospital is 3rd.

As several other people have commented, Dijon looks to be very walkable. I don't want to be walking up and down hills on cobblestones during or after rain. There also appears to be a lot of relatively new housing. The older buildings are lovely but no elevator and/or an energy rating of "F"? I'm not in my 20's anymore. Also, local government seems to be forward thinking–just my impression.
