I just found a beautiful Bianchi reparto corse with full Ultegra 6700 for sale and it looks like a great deal (€330), but it’s size M. According to the sizing tables I found on bikeradar.com I’m between S and M (167cm height). My main bike is an S size Triban but I previously had an M size hybrid too.
I know the usual advice is to size down, but could I get away with buying size M here if I replace the stem with a shorter one to get a better fit?
What other parameters would I need to adapt?
Finally, what makes Ultegra rim brakes better than cheaper ones?
