Mountain bike to single speed conversion

I want to buy an old MTN bike off market place and modify it to be a single speed so I can use it for city riding but also some gentle cross country and touring
The purple bike at the end is what I would like to get to, the other bike is the one I would like to convert

Any advice or information or recommendations would be lovely
