“The Great One-Man Bakery on the Market” is the continuation of Olivier’s renowned French baking tradition, which we’d like to introduce in this Episode of “Street Food Berlin Germany.” Besides Croissants, Pain au Chocolat, and Cheesecakes with Mango-Passion Fruit Topping, Cannelés Bordelais, and dreams come true like Raspberry-Mascarpone Cream-filled Fruit Sticks covered in white Chocolate, or Chocolate Financiers with Blackcurrant Puree, Pastry-Style Vanilla Cream with Mascarpone, and Pistachio Topping, Olivier offers all sweet-toothed delights at the Market. Of course, everything is homemade, as shown in detail in Part 1. Olivier loves the Market & the People, and his happy Customers love his delicious Cakes and Pastries—because “sweet things make you happy!”

Why do you do this with the market and not just your shop? I like it , and the people are really super nice, super friendly. Sweet things make you happy. Because Olivier has the most delicious croissants here at the market. Because the quality is perfect, it’s friendly. Delicious. Happy. 7 a.m. / Preparations for today’s market day. Where did you train? In Hanover. I grew up in Hanover. I trained at the Hotel Restaurant Georgenhof, a Michelin-starred restaurant. Then, at 20, I joined the army, the French army. When I came back, I went back to Hanover. I was a sous chef and head chef there for a few years, and then I came to Berlin at 29. So, are you actually French? I’m half French and half Catalan. My father was Catalan, my mother is French. I was born in France. The cocoa butter makes the chocolate more liquid, so it’s easier to work with. And wait again. Yes. Have you ever worked here with someone else? Um, yes, I had a chef I met here who tried my canelés . I had three different canelés at the time , and he thought they were so delicious . He was the pastry chef at his restaurant, a well-known one, and he said he’d help me if I ever needed it, if I wanted. I said, “Sure, you’re welcome to, but…” and then he said, “For free? ” No way, for free. And then he worked for me for a while, but then he went back to his studies. And, uh , but he was good, he was Greek and very nice, friendly, he did everything, no complaining, no whining, ” I’m tired, I don’t want to anymore.” That was really good. Downstairs. It’s a bit too hot. Here again. This is chocolate, white chocolate, cocoa butter, colored, but it’s still too thin for me. The price quadrupled last year. 400%. Just imagine. And what’s it colored with? Food coloring. There’s no other way. A lot of people say piping bag, but it’s not a piping bag. It’s a pastry bag. No scissors. So get out of here. This black stuff is vanilla. Don’t think it’s dirt or anything. Okay. You again? Okay, let’s clean up first. Drive forward another half meter, then I’ll try to get past you. I just want to unload. But he can go in. Like this. Like this. Dude. Go on. He’s driving it back. His hands are too big. Please? Yes. No, it has to go in there. No problem. I’m off then, okay? When should I be there? Please? When should I be there? As always! Good. Okay, I’ll open the tailgate now. This is it. Like I said, the truck is ancient. It’s from 1960. That’s why it’s a bit of a wreck, but I like it so much. I like it. Okay. Hello. Hey. How are you? Good. Are you going to be famous here now? No. Not yet. Never. Never. I’m fine. Great. We just got back from vacation. Tell me more. Are there croissants now, too? Yes, of course. Pardon? I didn’t know, but I don’t really like croissants that much anyway. I just noticed. For two years now. Okay. Yeah, that’s why I didn’t notice, because I don’t usually pay attention to that sort of thing. Okay. It’s not your thing. Nah, they’re too buttery for me. Oh yes, then you can’t eat mine anyway. Yes, I know, but you put something on that one. Yes, but you don’t have to. Yes, but I know there’s a lot of butter in everything, that’s why it tastes so good, but I still like the taste when I eat it like a kind of bread and then I already have butter in my mouth. I don’t like that so much. Okay, because I’ll put extra butter on it. That’s what I’m thinking. And then honey or jam? Yes, exactly. It doesn’t work with Nutella. Nutella doesn’t work. No. Butter with Nutella actually works well. Yes, right? Not for me on a croissant, on a baguette it’s a different story. But for me, a croissant is jam or honey. Honey is best. Honey is best? Exactly. So, a raspberry. One raspberry to start with, exactly. But here, here, I’d like two more of these delicious ones. A canelé, yes? A canelé, exactly. Okay. By the way, they also had them in Japan. Okay. I didn’t try it because I know where the best ones are. Great. You can have another one for that. And I’d also like a little lemon cake. A little lemon cake. Can you fit all of that in? I still have boxes. Small cheesecakes with mango-passion fruit. Raspberry, blueberry. Also delicious. Plum tartlets, apple, right? The small ones. That thing way in the back. Is that pistachio? Just on top. Oh, it’s sliding off. Yes, it hasn’t been on there long. Oh, watch. That’s chocolate financier, blackcurrant puree, pastry cream with mascarpone-vanilla, and pistachios on top. Oh, delicious. Yes, then give me that one too. Then I’ll take that one as well. Now I know to put them in the fridge, right? Yes . It was totally worth it again. 8.20 8.20 11.15 € exactly. Have a nice weekend. I wish you the same. Ciao Ciao. Bye. Hello , I do n’t know, I’ve never ordered it, I’ve never actually eaten it, it’s not too much, my thing . And two canelés, please. That looks so delicious. Bye! Olivier. Thank you! Ciao Marie! Have a nice weekend. You too. I’d like four croissants. I’ll put four croissants straight into a big bag for you? Yes, what do you have? A big one, yes ? Yes. I’d like a berry tart. Raspberry or raspberry-blueberry? Raspberry-blueberry or raspberry? Mixed. It was mixed, was it? A lemon. Thank you. Okay, I’ll give you that now. Do you have it, yes? Yes, I do. Then I’ll get €17.60, please. Give me €15. Thank you. You’re welcome. Good luck. Yes, I wish you a nice day. Likewise. Ciao. Ciao. Croissant pain au chocolat? Yes, chocolate or croissant, that is the question. In any case, a coffee. Okay. Regular black, yes? Um , or cappuccino . And then I’ll simply have a croissant with it. And what would you like with that? Excuse me. Croissant. Certainly. I’m a little distracted. I’ll give you an extra small one. An extra small one? Yes. Here you go, sir. Thank you. €5.60 please. Thank you. And €4.40 change. Have a nice day. Ciao. And you converted the van yourself? Yes, always do everything myself, because, as I said, if some socket doesn’t work, I don’t have to call someone who searches and looks and tries to fix it. But I know the socket doesn’t work. Okay, the cable goes there and ends there. And where did you find the van? I found it on eBay, and it’s from Bavaria. It used to be a sausage van. Bratwurst and Bockwurst. That was it. Yes. And in the meantime, everything underneath broke down, rusted through completely. Of course, at that age. And last year they redid everything underneath. And now I’ve been assured the van will outlive me. Probably because they know how I live. Hello. Hello. Are you all right? Yes. And you? Yes. Yes? Well, as usual? As usual. As usual is good. Do you have chocolate croissants? Yes. You see, there are still some. First a chocolate one, and then we’d like a cheesecake. A small one. A cheesecake. What else would you like? These are the small ones. These are the large ones. The large ones. Then one of those. One of the large ones. Light or dark? I want dark. Dark, yes? Here’s another small one. A raspberry tartlet. I’ll make you one. A cheesecake. And a regular croissant, but to go. Okay. A regular croissant. Which one is the prettiest now? Do you always choose the prettiest ones? – Always! Always the prettiest ones for those who come first, and those who come last get what’s left. To eat right away, no, to go? Okay, I’ll just try it. Oh, they’re all starting to melt. It’s too warm. This is going down. Push it forward, take a bite, push it again. I think that’ll do it. 19 19 19 23. Thank you. I wish you a nice weekend. Delicious here today. Always come here and then we move on. Well, maybe the day after next, but we’ll be there. Bye. Bye. Yes, you buy them. Well, I do. He has to buy a cheesecake anyway. I’ll take two of these cheesecakes too. The small ones? Yes. I have some big ones too, but they’re not mango-passion fruit. I’d like two of the small ones. Okay. Are you having visitors? Nope. The passion fruit one is awesome. Okay, then we’ve got quite a bit already. Yes. Then I’ll say that’s it for now. That’s €8.10. €8.10. And 7 for €15.10. €15, please. There you go. Now it’s your turn. One cheesecake, please. A large one, yes? Yes. And two of the pistachio ones, please. Okay. We’re just having sweets. Today we can really go all out. What’s inside? You have to watch the video. You’re going to show a video, okay. But where can I watch the video? On YouTube. Moodi Foodi Berlin. Mood Foodi. By the way, you wanted to go to the Philharmonie with me today, if we can still get tickets. You wanted to go, right ? Should I tell you, to the Berlin Philharmonic and they’re conducting Strauss’s Alpine Symphony. Okay. That’s the Alpine Symphony? Yes, yes, it’s a monster. Late Romantic. I heard it was Mahler’s First, he opened it and it was phenomenally conducted. The guy is 28. It’s simply unbelievable. That ‘s €19, please. That’ll add a little raspberry or blackcurrant. Mmmh. Thank you. Thank you very much. Thank you. Bye. Sweet makes you happy. Bye. Have a good one. Bye. Hello. How many? Three. And a fourth one too. There, that’s €8.10. € 8.10, please. Thanks. Have a nice day, bye. A snail. What’s in it? Cinnamon. I’ll take it. Here you are . Thank you. I wish you good business. Thank you. Wow, great stuff. €11.50. That’s cheesecake. Small cheesecakes. And over there are big ones. I definitely want a small cheesecake, and do you also make cappuccino? Yes. Of course. A small one. And what’s on top of that? Mango passion fruit. That sounds very good. And a cappuccino, yes? So, give me five, neighbor. Thank you. Looks phenomenal. Enjoy. If you have something to complain about, then complain. I never complain. Then I can improve. Bye. Bye. I’d like another one of those walnut cakes. A walnut financier. Here you are . Thank you. Hello. I’d like two of those raspberry cakes. Yes. One lemon for sure. What’s that chocolate? This is a chocolate financier. Yes. This one’s made with almond flour, honey, salt, sugar, egg whites, lots of butter, and a little flour. And this is the half-baked Belgian chocolate cake. It’s very chocolatey. And what’s with the pistachios? That’s a chocolate financier, blackcurrant puree, pastry cream with vanilla and mascarpone, and pistachios on top. Those are the little ones in the back. Right. I think that’s it for now. Okay. Two raspberry tarts, right? Yes. The half-baked one. Oh, a piece’s broken off. Is that okay? Or should I give you another one? That’s fine. But please have this one too, this one. Which one? This one. We’ll have to try it again. Okay. This one. Right. Can you tolerate walnuts? Because the raspberry tart is broken, I’ll give you a walnut with it. Okay, thank you. So, two raspberry tarts are €8. €10.50. €12.90. €16.90, please. Thank you. Make it €17. Thank you very much. Great. Thank you so much . Bye. Have a nice weekend. Why do you do the market and not just your shop? I did the market much earlier and I like it. The people are really super nice, super friendly, even if there’s a line of 10 or 15 people, they’re all patient, they all wait their turn. I don’t have to stress. I can still talk to everyone, you know, in a nice way , and that’s why it’s fun. And the shop, I only really have that because I wanted to produce things there and thought, okay, if I also have the space in front, then I might as well open a café. So that’s just a side business; if the café does well, that’s fine, and if it doesn’t, or doesn’t do well, that’s okay too, because I actually finance the shop with the market, if it’s doing well, if things are busy. What determines whether things are busy or not? Public holidays. Thursday was a holiday. Most people take Friday, Saturday, and Sunday off, which means they go away. And especially in Steglitz, there are a lot of families, so at Easter, for example, you can close, nothing happens. Like, ten people a day, you just say, okay, come on, I don’t need that. Whenever it’s school holidays, whenever it’s school break, business goes downhill. And that’s why it’s the same during the summer holidays. I close for four weeks during the summer holidays because I’d have more expenses if I stayed open than if I just paid the rent and left it at that. And besides, it’s good for me to do nothing for four weeks. Just to hang out, eat, drink, go for walks, do a little bit around the apartment, because it always gets neglected. Yeah. They’re nearby? I have no idea. I don’t monitor them, you know. Can I have a latte first? A latte? Okay. And you, Kaspar? I’ll just have a black coffee, please. Okay. Easy peasy. There. A latte. A coffee. Thank you so much. It was all folded down last time. How lucky that Steffi isn’t here, it would be way too high for her. She can’t reach it. Kaspar, come on. If you’re having coffee, you have to have something sweet with it. Thank you. No, it’s not being shared, is it , Meike? Meike isn’t sharing. There’s a little liquid inside when I bite into it. 12 pieces, okay. May I ask how it tastes? Good. Tasty. Delicious. Very good. It’s still liquid inside. So, excellent. Delicious. Are you regulars? I’m from Hanover. But when I’m here, I’m always here or at Crapulix itself. Yes, always good. Very tasty. Because it’s all just so soft for transport. I can give you another one with a mold. You just have to bring the mold back to me. Does he know you well enough to trust him with your number? 16. Thank you. Absolutely, with pleasure. Is there any coffee? Yes, right? Yes, we have coffee too. Oh, those are my favorite things, madeleines. I know that, I’ve met you before, thank you , when you were on your way here. It turned out well today, didn’t it? Not dry, lovely. So, coffee, madam. Mhm. Well, for me, something like a coffee cream or something like that is best. Not too heavy. So, a black coffee. Yes, exactly. I’ll have a cappuccino with oat milk. Certainly. What did you mean just now? That Olivier has the most delicious croissants here at the market and very delicious madeleines, in general. Will you say stop? I can’t see how much. Just as full as possible. That’s wonderful, like that. Shall we share a croissant? Absolutely. Or would you like your own? Because I’d like some other things. Here you go. Very nice. Well, that’s easily enough for two. A croissant can never be too big, right? Yes , if it’s bad. Yes, that’s true, though. Then every bite is torture. I have to agree immediately. Shall we stay here, then? I’d just like one croissant. Okay. You too? So, I’ll show you. 2.80. Yes. Everything alright? I think so. Thank you. Everything’s great. Thank you. Enjoy it. Wow, Holy. Yes. That’s quite substantial. There’s plenty of butter in it, and flavor, and lots of love. Thank you. Bye. Good morning. A very good morning to you. We’d like two croissants. Yes, two bags, please. Two bags, please. Yes, gladly. Because the one with lemon was great too. Are they also with chocolate? Is it with chocolate? No, I want a regular one. I want one with chocolate. Okay. Because we’re supposed to bring them for him. One? Four. The cinnamon roll or the canelé? Yes, now’s the question, right? Well, I hope it’s the canelé. Yes, but… Then we’ll take two of each . Yes, I think that’s what he said too. They weren’t finished yesterday, were they? Okay. Great. And one orange and one lemon. Orange and one lemon. What are they called again? Canelé Bordelais. Ah. €21, please. Where are you from? I’m from Rotterdam. From Rotterdam. I’ve never been there. Beautiful city, modern. Zandvoort was nice, Haarlam. Amsterdam, not so much. It’s as big as Berlin. Yeah, it’s too much for me. A bit much. Yes. Yes. Merci Beau Coup. That’s right. Or? How much was it? Yes, that’s fine. 21. Okay. Merci. See you soon. See you soon. Hello. Hello. One pain au chocolat, two of those. Pack up all the croissants? Exactly. Like this. One croissant. One pain au chocolat. And what’s this? A small cheesecake. And the sauce? Passion fruit and mango. Perfect. One, please. And what’s the green stuff? Excuse me? The green stuff is? Um, so that’s the stick on top, right? Raspberry puree, mascarpone. Raspberry mascarpone cream covered in white chocolate. Yes, exactly. That’s it then. And that was two canelés. €17. €17.70. Could you please make two more cappuccinos? Or could you make a flat white instead? Whatever you’d like? Yes, two flat whites, please. Do you come here often? Yes, of course, almost every week. A regular customer then? Almost. Delicious. Why do you keep coming back? Because it’s simply perfect quality. Friendly, lovely, good, delicious. Exactly, that’s what I wanted to hear. Yes, perfect. This isn’t for young ladies. Bonjour, mon chéri, €17.70 plus the two flat whites. €17.70 makes €22 . Thank you. Thank you! Have a nice weekend. I wish you the same. Bye. She doesn’t want to bother you, that’s why she’s so reserved. Where is she? She’ll be right there. It was wonderful! Thank you very much. You’re welcome. Yes, and do you have someone helping out from lunchtime onwards? My daughter isn’t a helper, she’s a specialist. She bakes all sorts of things. Macarons, baguettes, bread, cakes, all kinds of canelés. Some are even better than you. But that’s just what you think. No, my canelés are more difficult. You’re welcome. I don’t know how much it costs. Will 5 euros be enough? 500. 500? 3.50 euros. That’s correct. Thank you. What motivates you? Because I can do it, because it tastes good, and because I enjoy it. And since I don’t cook anymore, it has to have something to do with food, with taste, with production. That’s it. Mmmh. Sweet things make you happy.

Was ein toller Bäcker…Respekt.

  4. To be honest I couldn’t complete the video it’s not only about not using gloves 🧤 I think he’s sweating, his hands and his clothes was really disgusting 🤢

  7. Cherry on Top! Einfach feel good! Danke!

  12. people who think gloves are better. i saw many cooks smoking with their gloves on in the back alley…flipping them only 3 times a day…you have no clue…good cooks don't use gloves. they wash their hands after each step…because it feels bad to have greasy hands….and you have more feeling what ya doing.

the cigarette..fair enough…but it's not that bad how people here are making it up….but…sure it was not the best move to show on camera.

to use milka chokolate has nothing to do with good or bad kitchen skills. it's just about taste and believe me..the croissants are very good ! so do not talk about things you have no clue about.

The graffiti on the market trailer is surely not what he likes…but to remove it makes no sense…it will be sprayed again…its berlin. he doesnt bring it to a garage every night i guess…

to manage that amount of baking goods you cannot do the things perfectly good looking. taste and texture first…and speed.
he is a one man army.

and people who say there are not good bakeries in berlin…you do not know berlin…it's a big city. from mahrzahn to wannsee..from lichtenrade to waidmannslust…you have no clue.

so. if you don't like it…stay fair…or just move on…
    if you like it…pay a visit….

just a cook who hates negativity

  14. TODO SE VE. DELICIOSO,ACÁ EN ESPAÑA,NO ENCUENTRAS NADA,NI MEDIO PARECIDO,ME COMERÍA UN CROASAN DE QUESO Y UNA CANASTA DE FFRUTOS ROJOS ,,,! QUE DELICIA TODO LO QUE HACES,DONDE TE ENCONTRAMOS??

  17. I wish as he do best quality bread and pastries. He dont forget his own health specially his heart god bless this bakers soul and his heart keep safe always. And i will visit that place one day .
