I'm thinking of upgrading from my Scott CR1 20 from 2015 due to some of its limitations (can't really fit wider than 23mm tires due to chainstay width) and just wanting a new bike. Budget is max $7000 Canadian all in and deciding between Canyon/Giant mostly:

I'd be able to grab the Giant bikes from a LBS with one or two free basic services

I was curious if, in general, it is more worth it to buy the 'cheaper' frame bikes (Defy advanced 1, Endurace CF) and upgrade some key components like wheels and tires or to buy a slightly 'higher end' frame (Defy advanced pro 1, Endurace CF SLX) as they are spec'd online? I'm currently leaning towards the Canyon Endurace CF 8 di2 largely because I can grab Ultegra at sub-$5000. Would love to hear your thoughts and some feedback.
