Well here is the final update. I found some heavily discounted handlebar grips and pedals, got some mountain bike tires, ordered the recommended brake pads, and cannibalized a seat from a smaller mountain bike I owned. Additionally I went to a local coop so I could use their space and tools to swap out the cables and housing for the rear brakes and get some help fine tuning the cantilever brakes meaning it now stops much quicker. Overall I'm really happy with it especially for how little money the whole project cost and I've been having fun on some green and blue trails. Oh and as some people suggested while at the coop they were able to do a safety check on the frame to help ensure it would be safe enough on the trails.
