I'm looking for advice for our coming trip to Norway in mid July. We intend to do about 800km over 2 weeks.

The default concept: leave the car in Denmark and take the bikes on the ferry to Norway, another ferryline should bring us back.
We will mostly be camping and have bring some standard cooking gear along.

I now have this in mind, a combination of National Cycling Routes 2, 3 and the "southern explorer" from CycleNorway. (Stavanger>Kristiansand>Porsgrunn)

Are these "the good routes" to explore Norway for our travelconcept, or any areas/routes that are more worth it? (We are also not against train rides in between)

We both use gravelbikes with 45mm tyres, and we love some offroad. There is less then 25% gravel in now. Anyone tips to weave more offroad adventure in the trip? Or is this just no option/bad idea. Or do the roads feel a lot more off-road then that the surface guide of Komoot claims.

What must see's are worth a detour?

All other tips related to this area (camping, equipment, weather warnings…) are welcome for sure. Thanks!
