I currently have an old mountain bike that I’ve been riding for several months. Now that I’m really getting into cycling, I would like to invest in a more appealing bike that will allow me to progress in the sport.
As for my cycling style, I enjoy mixing my routes with trails, paths, roads, and bike paths. I would say 60% off-road 40% road. The region where I ride is relatively flat. I cycle 3 to 4 times a week, with rides lasting 2-3 hours. In the long term, I would like to organize longer multi-day trips, like bikepacking.
So, I’ve determined that a gravel bike would be suitable for my riding style.
I have a fairly tight budget (especially because I also want to invest in a good pair of pedals, cycling shoes, winter cycling clothing, etc. The expenses add up quickly when you’re starting out. :D), but I’ve noticed two bikes that meet my criteria, and I’m hesitating between the two:

Pros: The fact that it’s made of steel, the multitude of attachment points, thrue-axle.
Cons: The 1:1 gear ratio, mechanical brakes?

Pros: The GRX groupset and the gear ratios it offers (46-30 + 11-36), TRP brakes, thrue-axle.
Cons: ?
Regarding the rest of the components, my knowledge is limited, and that’s why I’d like to hear from people who are well-versed in this.
If you were in my shoes, what choice would you make and why?
And if not, are there other models to consider? (I live in Europe)
