Because Dr Bridgewood is an absolute machine. He did a 1000km ride not long before this. This was a recovery ride for him
Drink what raramuri tribe drink. Most of them run dozens of kms per day, think a 42 kms run is boring and a short distance run. There beverage of choice during exercise is simply lemon juice, water, and chia seeds, occasionally agava or honey for taste. They even drink low fermented beer (and around 2% alcohol) during their run lol. I'd like to see you try this routine. Most people who read Born to Run and they are a lot know this. Of course there are much more factors than this
That's a significant amount of fluid loss. Your training kept you out if hospital. Looks like way more fluids, no matter what mix, were needed.

Living in Perth Australia, a 5 hour ride can be a little warm in summer, I sweat a lot like Alex, and weighing 95kg before a ride, drinking 3l (3kg) plus some gels, I've dropped 4kg to 91kg at the end. It comes back very quickly though, within two days, I was back to 95kg.

You should get your sweat tested. A nutrition specialist mentioned it to me, I couldn’t believe it’s a thing but it is! Harry Sweeny did a vid on it I think but would be good to see GCN vid
That is the most catastrophic under fueling I have ever seen. Alex was a former professional? Both Alex and Ollie were riding at or above tempo all day, in that heat that’s minimum 500ml per 45 mins
