The Paris-Brest is a showstopper dessert—it’s a big circular ring of choux meant to resemble a bike tire, traditionally filled with delicious praline mousseline. My version also includes Nutella, chopped chocoalte covered pistachios and almonds, milk chocolate praline ganache, and some tempered chocolate butterflies for decoration.
