Planning My First Bike Tour

I'm planning a European bike tour for me and my honey this coming Spring.

I ride a fair bit, and used to guide fancy bike tours. My honey is not an avid cyclist, but she's very strong, fit and capable.

I don't want to plan every moment of every day, but I also don't want to be huddled in the rain wondering where to go. We're planning on mostly camping in the country and resting in hotels in the cities.
