I'm looking for my first road/gravel bike that would cover like 80% road and 20% gravel (tires between 30-40 mm) in the range range of 1000-1200€. However, while most of most of the bikes have beginner shifts and so on (GRX 400 series), they fail to offer hydraulic disc brakes which everyone seems to recommend. In my case I think it's a bit unnecessary to have for example GRX800.

Or should I go for a Nuroad Race for the same price that has better features (but worse design) for about the same price?
Do you have any other suggestions?
I found the Rose blend an attractive option but I don't like the design, it somehow looks cheap
